Mail Mondays with Country Crock

Thanks to Influenster and Country Crock, I’ve been experimenting with Country Crock Original Spread. Country Crock has been doing a #MakeItYours campaign and I receive a free tub of the original spread to use and review. They have a generic cookie recipe (see below) and then you add whatever add-ins you’d like to make your own unique cookies! Our first batch was chocolate mint chip. They turned out ok but not great. The second set was oatmeal with cranberries and white chocolate chips. Those were great!

The basic recipe, as shared by Country Crock, is:

Makes approximately 4 dozen cookies
Prep Time 10 min
Cook Time 12 min

  • Ingredients:
  • 1 cup Country Crock® Spreadable Sticks or Tub, cold from the refrigerator
  • 3/4 cup granulated sugar
  • 3/4 cup firmly packed light brown sugar
  • 1 large egg
  • 1 large egg yolk
  • 2 tsp. vanilla extract
  • 3 cups all-purpose flour
  • 1 tsp. baking powder
  • 3/4 tsp. salt
  • 1/4 tsp. baking soda
  • 1 to 2 cups of your choice of mix-ins

Directions:

Preheat oven to 375°. Mix Country Crock® Spread, granulated sugar, light brown sugar, egg, egg yolk and vanilla in large bowl until well mixed. Stir in flour, baking powder, salt and baking soda until blended. (Dough will be soft and creamy.)

Add your favorite mix-ins in any combination, and mix until every spoonful of dough has some of the delicious mix-ins.

Drop dough by rounded tablespoonfuls on ungreased baking sheets 3-inches apart.

Bake 10 to 12 minutes until edges are lightly golden. Cool 1 minute on wire rack; remove from sheets and cool completely.

Add toppings and decorations if desired.

For the mint chocolate chips, we added about 1 cup of Nestle Mint Chocolate chips. The oatmeal cookies, we replaced 1 cup of flour with 1 1/2 cups old fashioned oatmeal and added 1 cup dried cranberries and 1 cup white chocolate chips. Both were made with a 1 to 1 gluten free flour blend.

So, how do we like the Country Crock? Our opinions are mixed. It is really easy to use in baking. Since it’s soft out of the fridge, there’s no planning ahead and waiting for butter to soften. However, the cookies would NOT brown. At all. They were soft and crumbly and no matter what I did (I experimented on each tray of cookies with both batches), I could not get them to brown or crisp. The plain mint chocolate chip ones had a very chemical-like after taste. I’ve used this gluten free flour blend many times before without any issues in browning and baking, so the only variable was the butter in both cases.

Outside of baking, it’s really not our favorite. It does NOT melt. It spreads beautifully but doesn’t melt. On anything. We’ve tried it on toast, potatoes, corn on the cob. It just sits on top of all of them. It leaves a strange film on the inside of your mouth when used in these applications. It tastes ok, but it’s definitely not butter. At the end of the day, we’re unlikely to actually buy any in the future. I like the convenience but it lacks flavor and usability for us.

Welch’s Refreshingly Simple

Thanks to BzzAgent & Welch’s, our family had the opportunity to try the Strawberry Raspberry flavor of Welch’s Refreshingly Simple and we #GotItFree!

The flavor we tried was good, but seemed overly sweetened. The drink has simple ingredients (just water, sugar, fruit juice concentrates, and citric acid). It is lower sugar than 100% juice and does taste refreshing. We loved that it didn’t have a bunch of additives or added sugar. We weren’t huge fans of the flavor. The preschooler said it was WAY too sweet & wanted lots of water in hers. Both my husband & I thought it tasted like grown up Kool Aid and liked it over lots of ice.

I think it would be great added to iced tea in the summer! Simple drinks on a hot summer day are the best! Welch’s Refreshingly Simple will make flavored iced tea a cinch! It would also be great frozen into ice cubes and used in sparkling water for a refreshing summer drink.

In the Mail Monday

This week we are looking at the latest Influenster VOXbox. The box is called the Sunshine VOXbox.

We have: Infusium23 Moisture Replenisher Leave-in Smoothing Crème enhanced with Avocado and Olive Oil, Dickinson’s Original Witch Hazel Cleansing Cloths, Blue Diamond Sriracha Almonds, barkTHINS, SinfulColors Nail Polish, and Vaseline Intensive Care Aloe Soothe Spray Moisturizer.

I tried the Infusium23 first. I have wavy hair and usually follow a slightly modified “Curly Girl” regime. That means no silicones, no sulfates. I occasionally cheat and use silicones, so I shampoo my hair once a week or so to get rid of buildup. In between, I wash with water & conditioner. The Infusium23 has a few different silicones in it so I was hesitant to try it. I straighten my hair a few times a month, and use silicones then, so tried the Infusium23 on a day that I planned to straighten. Once my hair dried, it was so soft, smooth, and was already straight! I didn’t need to use the straightener. My hair didn’t feel weighed down like it does with most leave in products. I am really impressed and will be using this on “straight hair” days!

I’ve been using Dickinson’s Witch Hazel for years as a toner. The cloths are so convenient! They are more expensive than I’d like for everyday use but they will be fantastic for travel. They’re gentle enough for my sensitive skin and don’t leave me with dry, flaky patches.

The Blue Diamond Sriracha Almonds are one of my favorite things in this box! I expected them to be spicy but they have only the faintest hint of spice. The main flavors are lime and garlic. They are fantastic! My toddler adored them as well.

I haven’t had a chance to try the barkTHINS yet. The box included a free coupon but none of my local stores carry them. I’m hoping my mother in law can find them and bring them up on her next visit.

The SinfulColors Nail Polish comes in such a fun assortment of colors! It’s fairly inexpensive and goes on nice & smooth. I was sent the color Sheer Genius. It’s a light pink with just a hint of violet and it’s very sparkly. It’s a sheer color, so used on it’s own, it gives just a hint of color. Over another color, it gives a light pink sparkle. It seems to be holding up well and I love the sheer color!

Last is the Vaseline Intensive Care spray. I love this spray! It works so well and is so convenient. The scent is a little stronger than I would usually pick but it fades quickly and leaves my skin so soft & smooth. We’ve been swimming almost every day this summer and my skin was showing the effects of that much sun and chlorine! A few days of using this after my shower and after rinsing off after swimming and my skin was visibly smoother and softer. Love it!

I don’t think I have any more samples coming this week. I’m waiting for 2 more boxes to ship so hopefully in the next few weeks, I’ll have more products to share with you! Follow me on Instagram to see the samples as I use them!

In the Mail Monday

Thanks to BzzAgent and Influenster, it’s been a busy mail week. I’ll share my current BzzAgent campaigns with you today and next Monday we’ll look at the Influenster box.

I’m in 3 current campaigns and my husband is going to start testing out an energy drink next week. I received all 3 of these products free of charge in exchange for an honest review. All opinions are my own.

First up is Tide Free & Gentle PODs. Tide’s #SecondSkinCare is free of dyes & perfumes, is hypoallergenic and dermatologist tested. We have 2 people in the family with eczema, all 3 of us have sensitive skin, and I hate froofroo fake flower scents, so I’m always on the lookout for free & clear detergents that really WORK. Tide PODs work. Our clothes smell clean, without smelling fake flowery, the feel soft, stains come out easily, and this rinses really clean. If it wasn’t so expensive, I’d probably switch completely. Since it is so expensive, I expect we’ll just use it when we need something quick & convenient or if I find it on a great sale.

Next is Secret Outlast clear gel. They boast #epic48 48 hour wetness and odor control. While this is a little overly scented for my preference, it works really well. Goes on easily and dries quickly. It doesn’t seem to rub off on anything and has been holding up well to our over 90f days. If I can find a scent that isn’t quite as strong, I will probably switch to this as my first summer choice!

Last is International Delight Iced Coffee. My store had limited flavors available so I selected Light Caramel Macchiato. It’s a little too thick, but has a great taste. I’m a cold-brewed coffee addict in the summer, with a splash of homemade caramel and milk. The International Delight can never stand up to the homemade stuff in taste or texture, but it is really good for a grab and go. Even tastes yummy heated up! #IDelightIn10
